Description

The casings are for FRESH SAUSAGE. They are very tender with a high collagen content. They are as good of collagen for fresh sausage links that you can buy. They are as tender as a "mothers love". You will find them in the bottom of your smoker if you make snack sticks or hot dogs and hang; however, they make wonderful sausages if you lay on racks and smoke and cook. That is how I did the smoked sausages in the picture. I stuffed and tied them of in links with crochet thread before laying on the rack and smoking. Us old timers tie the links by: 1. Cut 3 or 4 feet of string 2. Tie to the end of the casing 3. circle the strand and half hitch every 6 inches to the end of the strand. 4. tie to the other end of the casing. After cooking-place the sausage in ice water. Remove and pull on the string and it cuts the sausage into links automatically. 23 mm is a nice size casing as it will slide on a 5/8 inch horn as well as being a nice eating size for the grill or pan .
